This dressing reminds me of a delicious salad at one of our favorite Asian Restaurants, Kuma’s Asian Bistro, in Rockford and in Naperville, Illinois. It is a refreshing, flavorful dressing that is typically served with iceberg lettuce and shredded carrots, but I say go for the gusto and pile on the colors for your salad ingredients. Plant-based Salad Dressing - Carrot Ginger Dressing
♥ Ingredients ♥
1 cup carrots
1/4 cup onion
1 inch piece fresh ginger, peeled
1 clove garlic
1 tablespoon brown sugar
1/4 teaspoon sea salt
1/4 teaspoon turmeric
1/8 teaspoon fresh ground pepper
3 tablespoons olive oil
1 teaspoon sesame oil
2 tablespoons rice vinegar
1 teaspoon lemon juice
2 teaspoons Liquid Aminos or soy sauce
– Put all the ingredients in a blender or food processor, blend until smooth.
Start with carrots, onion, ginger, and garlic.
Add dry ingredients, then liquid ingredients. Blend until smooth.
The ingredients in this dressing have health protecting carotenoids, vitamin C, phytochemicals, fiber, anti-inflammatory, and anti-oxidant properties. Enjoy!
